Low(er) Calorie Peanut Butter Cookies with TRUVIA!

Hawdy!

Let’s get right to this easy peasy recipe so we can enjoy the fact that they have over 1,500 LESS calories (approx 30 cals less per cookie) yeah that’s but still taste the absolute same, if not better than original peanut butter cookies.

Ingredients needed:
2 Cups Truvia
2 Cups Natural Raw crunchy peanut butter
1Tsp Vanilla
2Tsp Baking soda
Pinch of Sea Salt (optional)

Now I love salted caramels, salt water taffy and lighted salted peanuts so I added the pinch of salt on the top on the cookies AFTER they were rolled, presses and on the baking sheet.

Preheat oven to 350
Add peanut butter and sugar to bowl and stir until mixed thoroughly
Lightly beat eggs, add in half mix with mixer until incorporated then repeat with last of the egg
Add in vanilla, baking soda and salt and stir until mixed

Line baking sheet with parchment paper
Roll dough into one inch balls and place about two inches apart
Use a fork to make your little grids
Place in oven for 8-12 minutes depending on your preference (shorter time softer cookie)
Leave on baking sheet for 5 minutes to cool before placing on cooling rack or leave on for crunchy cookies!

You could also add a sprinkle of chocolate chips and/or toffee pieces to your gridded cookies for a little something extra!
